Are you on zucchini overload? You don’t want to miss this zucchini pie. It is the best way to enjoy summer produce. It takes just 10 minutes to make a tasty side dish you can serve with grilled beef, chicken, pork chops and a vegetarian entree you can combine with simple green salad to create a satisfying meal that will please even the most discerning palates.

Cook Time: 40 minutes
Total Time: 50 minutes
Servings: 6 – 8 servings

Ingredients

1 cup Bisquick (or other similar all-purpose baking mix)
½ cup vegetable oil
4 eggs
½ teaspoon kosher salt
½ cup grated Parmesan cheese
½ cup grated cheddar cheese
3 cups thinly-sliced zucchini
1 small sweet onion, diced

Instructions

Preheat oven to 350°F (180°C). Spray a 9-inch deep-dish pie plate with cooking spray and set aside.

Mix the Bisquick oil, eggs, salt, and oil in a large bowl. Stir in the Parmesan cheese and cheddar cheeses.

Add the onion and zucchini to the bowl.

Put into a prepared dish.

Bake for 40 to 45 minutes or until golden brown.
