Ingredients
1 cup Bisquick (or other similar all-purpose baking mix)
½ cup vegetable oil
4Â eggs
½ teaspoon kosher salt
½ cup grated Parmesan cheese
½ cup grated cheddar cheese
3 cups thinly-sliced zucchini
1Â small sweet onion, diced
Instructions
Preheat oven to 350°F (180°C). Spray a 9-inch deep-dish pie plate with cooking spray and set aside.
Mix the Bisquick oil, eggs, salt, and oil in a large bowl. Stir in the Parmesan cheese and cheddar cheeses.
Add the onion and zucchini to the bowl.
Put into a prepared dish.
Bake for 40 to 45 minutes or until golden brown.
