Buttermilk Marinade:
2 cups buttermilk (substitutions available in notes)
2 large eggs, whisked
3 teaspoons salt
Breading:
1 1/2 cups all-purpose flour
1/2 cup plain or Italian breadcrumbs
2 1/2 teaspoons seasoned salt
3/4 teaspoon paprika
1/2 teaspoon cayenne pepper
1 1/2 teaspoons black pepper
Directions:
Preparation:
Place each chicken breast between saran wrap and use a meat tenderizer to pound it to a thickness of 1/2 inch.
Dry the chicken thoroughly and marinate in a mixture of whisked eggs, salt, and buttermilk for 1-2 hours or overnight.
Allow the chicken to sit at room temperature for 25-30 minutes before cooking.
Cooking:
Coat each piece of marinated chicken in the breading mixture right before frying.
Heat oil in a cast iron skillet to 350°F, covering the chicken by half.
Carefully place chicken in the skillet and cook for 4-5 minutes on each side, flipping with a thin spatula once the edges start to brown.
Transfer the cooked chicken to a wire cooling rack to let excess oil drain. Repeat for all pieces.
Serve with cornbread, mashed potatoes, and gravy. Enjoy!
