Mexican food is a favourite at our house. This Taco Tater Tot Casserole recipe is one of our most favorite weeknight meals. Taco meat, melted cheddar, Rotel diced tomatoes and green chilies. Topped with sour cream and crispy tater-tots. What’s not to love? Add your favorite taco toppings to the hot dish: lettuce, tomatoes and olives, salsa, guacamole or guacamole. Taco Tuesday is a new experience!

Ingredients:
1½ lb lean ground beef
1Â (1-oz)Â package taco seasoning
1 (10-oz) can diced tomatoes and green chiles, undrained
⅓ cup water
1Â (10.75-oz)Â can condensed cheddar cheese soup
1Â (16-oz)Â container sour cream
2 cups shredded cheddar cheese
1Â (32-oz)Â package frozen tater tots
Instructions:
Preheat oven to 350oF Spray a 9×13-inch baking pan with cooking spray. Set aside.
In a large skillet, cook ground beef until it is no longer pink. Drain excess fat. Add taco seasoning, chopped tomatoes, green chiles, and water. Simmer for 5 minutes.
Combine the cooked beef, cheese soup, cheddar cheese, sour cream and tater tots in a large bowl. Combine all ingredients until well combined.
Place mixture in prepared pan.
Bake for 45-50 minutes until the mixture is bubbly.
