Fresh strawberries are one of the greatest pleasures in life. They have a long growing season. You can pick strawberries from spring through the end of the summer, depending on where you live. If you’re able to resist eating them all, this sweet and soft pie is the perfect thing to make with them. This creamy, delicious recipe requires only a few ingredients and is incredibly simple to make.
Makes 1 pie
5m prep time
40m cook time
INGREDIENTS
1 9-inch pie crust, unbaked
1 quart fresh strawberries
1 cup all-purpose flour
1 1/4 cup sugar, plus more for dusting
1/4 teaspoon salt
1 cup sour cream
1 teaspoon vanilla extract
PREPARATION
Preheat oven to 450°F.
Hull strawberries and slice them in half. Set aside.
In a large mixing bowl, sift together flour, sugar, and salt. Add sour cream and vanilla and mix until smooth.
Fold in strawberries and pour into pie crust, gently spreading out filling without packing it down.
Dust the top with about a tablespoon of sugar and bake for 10 minutes. Reduce heat to 350°F and bake until crust is golden brown, about 30 minutes more.
To brown the top of the pie, broil 2-3 minutes. Chill completely before slicing. Enjoy!
