I will never get tired of recommending this awesome recipe to my friends, and that includes you! This Spinach and Mushroom Smothered Chicken will surely make your day extra special! Yield: 4 Servings

Ingredients:

4 boneless skinless chicken breast halves (4 oz. each)

3 c fresh baby spinach

1-3/4 c sliced fresh mushrooms

3 green onions, sliced

2 slices reduced-fat provolone cheese, halved

1/2 tsp rotisserie chicken seasoning

2 tbsp chopped pecans

1-1/2 tsp olive oil

Directions:

Prepare the grill and preheat.

Place a large skillet on the stove and turn the heat to medium-high.

Add oil and allow it to become hot.

Add the green onions and mushrooms, then sauté until soft.

Add the pecans and spinach, then cook until soft as well.

Remove the skillet from the stove and cover to sauteed veggies warm.

Sprinkle the seasonings over the chicken, then rub until well coated.

Place the chicken over the preheated grill, then cook each side until done.

Add cheese over and cook for a few minutes until melted completely.

Top each serving with the mushroom mixture.

Serve and enjoy!
