This salad makes a great contrast to a spicy or barbecue meal.
Cool salads on hot summer days sound like the perfect way to beat the heat. We love cucumber salad, as well as fresh vegetables tossed in a vinaigrette. It’s refreshing and crisp, which is exactly what we need when we don’t want to use the oven or stove. Creamy cucumber salad is a great substitute for potato salad. Here’s how it is made.
