Ingredients:
1 pkg. sausage (13-16 oz) sliced
1 medium yellow onion, chopped
5 medium potatoes, about 2 lbs. peeled and diced
1-2 tbsp olive oil
1/4 tsp paprika
salt and pepper to taste
Directions:
Prepare the veggies. Peel and slice the potatoes and onions.
Slice the sausage into bite-size pieces.
Place a medium skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of olive oil and allow it to become hot.
Add the onions and sauté until translucent.
Add the sausage slices and cook until they turn brown.
Add the potato slices and cook until brown.
Turn the heat down to medium-low, then cover the skillet and simmer everything for about 20 minutes or until the potatoes are fork-tender. Make sure to stir from time to time to prevent them from burning.
Add paprika, salt, and pepper to taste.
Spoon onto a serving plate.
Serve hot with salad. Enjoy!
