A Rocky Mountain Avalanche Bar feels like a Rice Krispies Treat, only better. If you want to ask me, it’s a Rocky Mountain Avalanche Bar. Rice Krispies Treats are not something I love. They are hard to eat and don’t have much going on. But these bars are an entirely different story. They are no-bake and no-stovetop bars that are just as easy to prepare. They also contain marshmallows and Rice Krispies, but that’s the end of the similarities. What are the differences?  They are a veritable avalanche of goodness.

INGREDIENTS
4 cups white chocolate chips
1/2 cup creamy peanut butter
3 cups crisped rice cereal
3 cups mini marshmallows
1/2 cup mini chocolate chips
PREPARATION
Grease a 9×13-inch pan with butter or line with parchment paper, leaving an overhang over edges. Set aside.
In a large microwave-safe bowl, melt white chocolate chips in 30-second intervals until smooth, stirring in between.
Add peanut butter and stir to combine, then add rice cereal and quickly stir to coat.
Cool for 10 minutes, stirring once or twice, until mixture is no longer warm.
Add marshmallows and mini chocolate chips and stir to combine, then press gently into prepared pan. Chill until set, then cut into squares and serve. Enjoy!
