A holiday treat that is easy!
Loaf cakes are my favorite. I love banana bread, pumpkin bread and zucchini bread. I could go on and on. A baked good is so simple and humble that it can be called bread, and you can eat it as a breakfast treat without guilt. Or am I just crazy? ).

1 15.25 oz yellow cake mix
3 3.4 oz pistachio instant pudding
1 cup hot water
½ cup vegetable oil
4 eggs, room temperature
¼ chopped pistachios
2-4 drops green food coloring, optional
Red and green sprinkles, optional
Preheat oven to 350 degrees F and grease two bread loaf pans.
In a large mixing bowl, combine cake mix, pudding mix, hot water, oil, eggs, and food coloring. Whisk until fully combined.
Add pistachios to the mixing bowl and whisk for an additional 1-2 minutes.
Transfer batter to the prepared loaf bans and top with sprinkles.
Bake for 40-45 minutes or until an inserted toothpick comes out clean.
Let cool before removing from loaf pan.
