Oven Roasted Parmesan Garlic Potatoes

Ingredients

2 lbsSweet potatoes [1]
1 tbsOlive oil (or oil of choice) [2]
1/2 cupGrated parmesan cheese, divided
1 tbsMinced garlic (or 1 tsp garlic powder)
1/2-1 tspSalt (to taste)
1/4 tspPepper
1/4 tspOnion powder
Optional Garnish:Chopped parsley or rosemary

[1] I used 3 medium golden sweet potatoes
[2] If you don’t want to use oil, be sure to spray potatoes very well with cooking spray.

Directions

The estimated total time to make this recipe is 30 Minutes.

Preheat oven to 450 degrees. Clean and cut the potatoes into 1/2 inch cubes. Line a baking sheet pan with foil and spray with non-stick cooking spray.

In a large bowl add the olive oil, 1/4 cup parmesan cheese, garlic, and seasonings. Toss with the potatoes until coated and lay in a single layer on your baking sheet. Spray potatoes evenly with cooking spray and place in preheated oven.

Roast for 15 minutes, and remove pan from oven. Toss the potatoes so they become evenly browned on all sides. Sprinkle with the rest of the parmesan cheese (1/4 cup), and spray with cooking spray. Return pan to the oven and roast an additional 15-20 minutes. After roasting, turn broiler to high and broil for 2-5 minutes, or until potatoes are browned to your liking, (be sure to watch them carefully when broiling so they don’t burn.)
