The other day I decided to start planning for the Easter menu.

I know some people plan their special meals months ahead, but I am usually the one starting to panic about two days before the big date. And then I come up with something that is tasty, but not exactly mind-blowing. This year I really want to make an impression! We have a group of friends coming over, so I want to cook something super delish.

I came across this recipe and it looked way too yummy to pass! Sure, I had made au gratin potatoes before, but these seemed to have that “something extra”. Of course, I had to give these a test run before I could add them to my Easter menu.

These potatoes turned out so out of this world that I could have just made them the main dish! My husband said it was the best thing he ever tasted in his whole life – and that’s a lot, coming from him!

Quick Tip: Adjust the amount of cayenne pepper to your taste

You’ll Need:

Mashed potatoes.
Butter.
Cooked bacon.
Cheese.
Parsley.
Green onion.
Garlic
Or you can add any yummy ingredients you want.

How to:

Mix the mashed potatoes with butter and any additional ingredient you choose and stuff it into a greased muffin tin. Even to the top and brush with melted butter or olive oil.
Bake in a preheated oven to 375° until tops are crispy and golden.
