Elbow macaroni, celery, sweet relish, and hard-boiled egg make up my mom’s macaroni salad. Light and flavorful, you think you will eat just one scoop on your plate, but then you find yourself going back for seconds and thirds. Backyard barbecues would not be the same without pairing a macaroni salad with a grilled steak, hamburger, or hot dog.
1 pkg macaroni, elbow (about 12 oz)
4 eggs, hardboiled
5 stalks celery
1/4 c sweet relish
3/4 c good mayonnaise
2 Tbsp yellow mustard
dash(es) salt and pepper
1. Cook macaroni per package instructions. Drain and let cool.
2. Chop celery and eggs.
3. Add chopped celery, eggs, and macaroni in a large bowl.
4. Mix in mayonnaise, mustard, and relish.
5. Add salt and pepper to taste.
