Pasta salad is a favorite recipe for cookouts and potlucks. It’s easy to prepare and can feed a lot! This Mexican Pasta Salad recipe is absolutely delicious! This Mexican Pasta Salad was a hit at our last week’s lunch and will be on the menu for our Fourth of July cookout. This is a must-have dish. In a quick salsa-ranch sauce, combine black beans, pasta, corn, onions and peppers. It’s so good! This recipe can be made quick by adding chicken or ground beef to it.

Ingredients:
1 (16-oz) package elbow macaroni
1Â (11-oz)Â can corn, drained
1 (15-oz) can black beans, rinsed and drained
1 bell pepper, chopped
½ red onion, sliced
4 green onions, chopped
1½ cups grape tomatoes, cut in half
¼ cup chopped fresh cilantro, optional
1 cup salsa
1¼ cups bottled ranch dressing
1 tsp cumin
Instructions:
Cook pasta according to package directions. Drain.
In a large bowl combine cooked pasta, corn, black beans, bell pepper, red onion, green onion, tomatoes, and cilantro.
Whisk together salsa, ranch, and cumin. Pour over pasta mixture. Mix until thoroughly combined.
Cover and refrigerate at least 2 hours to overnight.
