FOR THE SHRIMP:
4 tbsp (1/2 stick) unsalted butter, melted and divided
3 garlic cloves, minced
1/2 c dry white wine
1 pound jumbo shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp black pepper
Juice from one lemon
FOR THE TOPPING:
2 tbsp butter, melted
1/4 c Parmesan cheese, finely grated
Fresh parsley, finely chopped
3/4 c panko breadcrumbs
1/2 tsp salt
Prepare the oven and preheat to 218 degrees C or 425 degrees F.
Add 2 tbsp of melted butter and wine into a 9×13-inch baking pan and spread it evenly.
Place it inside the preheated oven and let it sit for 10 minutes.
In a mixing bowl, add lemon juice, garlic, butter, salt, and pepper. Stir until blended.
Add the shrimp, then toss until well coated by the sauce.
In another mixing bowl, add breadcrumbs, Parmesan cheese, 2 tbsp of melted butter, and salt. Stir until well blended.
Lay the shrimp into the hot baking dish.
Sprinkle the breadcrumb topping over the shrimp.
Place the baking dish inside the preheated oven and bake everything for about 12 minutes or until done.
Broil for 2 more minutes or until done.
Remove from the oven and sprinkle freshly chopped parsley on top to garnish.
Let it rest for a few minutes at room temperature.
