This meatloaf is extremely delicious! Such a quick fix, its perfect for any night of the week. I know your entire will really enjoy this recipe! Each 2 slice serving, 229 calories, 8 grams of fat and 6 Weight Watchers SmartPoints.

Ingredients for Meatloaf:

  • 1 slice bread multigrain or whole wheat bread (I used Milton’s Multigrain bread)
  • 1 pound (96%) extra lean ground beef, see shopping tip
  • 1 cup onions, diced or minced
  • 1 egg, I like EggLand’s Best or 2 egg whites
  • 1 tablespoon ketchup
  • 1 tablespoon spicy brown mustard or yellow mustard
  • 1 tablespoon pickle relish
  • 1 tablespoon Worcestershire sauce
  • Fresh ground pepper, to taste
  • A little seasoning salt or taste, if desired

Ingredients for Topping:

  • ¼ cup ketchup
  • 1 tablespoon spicy brown mustard or yellow mustard
  • â…” cup reduced-fat cheddar cheese, shredded

Instructions

  1. Preheat oven to 350 degrees. Line a baking sheet with foil and set aside.
  2. To make bread crumbs: break up bread and add to a blender or food processor. Process for a few seconds, until the bread turns into crumbs.
  3. In a large bowl, add ground beef. To the beef, add bread crumbs, onions, egg, 1 tablespoon each, ketchup, mustard, relish and Worcestershire. Mix in a little pepper and seasoning salt, if desired. Using your hands, mix together all the ingredients, until well combined.
  4. Place meat mixture on baking sheet and free form a loaf by hand. It should be about 12 x 3 inches. Bake for 40 minutes.
  5. In the meantime, In a small bowl, mix together toppings; ketchup and mustard. Remove meatloaf from oven once baked for 45 minutes. Spread the ketchup and mustard mixture all over top of meatloaf. Top evenly with shredded cheese. Place back in oven and bake about 5 minutes more, until cheese melts.
  6. Remove from oven and let rest for at least 10 minutes, before slicing.
