12 lasagna noodles, cooked to instructions
1 pound ground beef
2 tbsp olive oil, divided
24 ounces marinara spaghetti sauce
1/2 cup diced yellow onion
3 cloves garlic, minced
1/4 tsp crushed red pepper
1/2 tsp salt
1 tsp black pepper
1/2 tsp Italian seasoning
16 ounces ricotta cheese
1 large egg
1/2 cup finely shredded Parmesan cheese
3 cups shredded mozzarella cheese, divided
1/4 cup chopped parsley
Preheat your oven to 375 degrees Fahrenheit.
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until it’s no longer pink, using a spatula or spoon to break it apart. This should take around 3-4 minutes.
Add 1/3 cup of diced yellow onions and cook until they’re transparent, around 3 minutes.
Mix in 1/4 teaspoon crushed red pepper, 1 teaspoon black pepper, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt, and 3 cloves of minced garlic. Stir well and saute for another minute.
Pour in 24 ounces of your favorite marinara sauce, bring to a simmer, and cook for 5 minutes. Set aside.
In a large pot, bring water to a boil and add 1 tsp of salt and 1 tablespoon of olive oil. Cook lasagna noodles according to package instructions for al dente. Then, drain the noodles and put them back in the pot, covering them with cold water.
While the pasta is cooking, prepare the cheese mixture by adding 16 ounces of ricotta cheese, 1 large egg, 1/2 cup of finely shredded Parmesan cheese, 1 1/2 cups of shredded mozzarella cheese, and 1/4 cup of chopped parsley to a large bowl. Mix until fully incorporated.
Lay out the cooked lasagna noodles and divide the ricotta cheese mixture over the noodles, spreading it evenly. Add a large spoonful of the meat mixture to each noodle and spread it evenly. Spread 1/3 cup of the meat sauce on the bottom of a baking dish.
Roll the noodles up jellyroll-style and place them seam side down in the baking dish.
Cover the roll-ups with the remaining meat sauce, then sprinkle the remaining 1 1/2 cups of shredded mozzarella cheese over the top.
Cover the dish with foil and bake for 38 minutes in your preheated oven. Then, remove the foil and bake for an additional 2 minutes.
Serve garnished with chopped fresh parsley and enjoy!
