Oh my gosh, you guys, this keto chicken alfredo casserole is seriously out of this world! Like, I cannot even tell you how good it is. You’ve got tender chicken breast that’s been seasoned to perfection, and then you’ve got the creamiest keto alfredo sauce that’s just so dang flavorful. And let’s not forget about the cauliflower – it adds the perfect amount of texture and flavor to this dish.
Seriously, if you’re on a keto diet and you’re looking for something delicious and comforting, you HAVE to try this casserole. It’s super easy to make, too – like, I’m talking 15 minutes of prep and 40 minutes in the oven. And when it’s done, you’ll be rewarded with a big ol’ pan of cheesy, creamy, chicken-y goodness.

Ingredients:
14 oz cauliflower florets, cut into bite-size pieces
32 oz chicken breast, cut into 1-inch cubes
1 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
2 cups Keto Alfredo Sauce (you can make it yourself or use store-bought)
12 oz shredded mozzarella cheese, divided
Instructions:
Start by steaming the cauliflower. Place the cauliflower in a microwave-safe bowl with 1 cup of water. Cover with a damp paper towel and microwave on high for 3-5 minutes or until it’s fork-tender. Don’t overcook!
Drain the cauliflower and pat it dry with a paper towel. Set it aside.
In a skillet over medium-high heat, add the olive oil and cubed chicken. Season the chicken with onion powder, garlic powder, salt, and black pepper. Cook for about 10 minutes, or until the chicken is cooked through. Set it aside.
Preheat your oven to 350°F (175°C).
In a small pot, heat the Keto Alfredo Sauce over medium-low heat. Once it’s hot, add 3 oz of mozzarella cheese to the sauce and stir until it’s melted and smooth.
Grease a 13×9 inch casserole dish with non-stick spray and spread 1/2 cup of the Keto Alfredo Sauce on the bottom.
Add half of the cauliflower to the dish, creating a layer on the bottom.
Top the cauliflower with half of the cooked chicken. Make sure the chicken fills in the spaces between the cauliflower to fill the dish.
Pour 3/4 cup of the Keto Alfredo Sauce over the cauliflower and chicken.
Sprinkle 4.5 oz of mozzarella on top.
Repeat the previous steps using the remaining cauliflower and chicken to create another layer. Top the second layer with the remaining Keto Alfredo Sauce and the last of the mozzarella cheese.
Bake the casserole for 30 minutes, or until it’s warmed through and the cheese is fully melted.
