Our new favorite is Ham and Cheese Hash Brown Casserole. This was my lunch. My husband took one bite of the meal and declared, “Hey! It’s really delicious!” This was so good that he couldn’t stop eating it! It is insanely delicious! It includes ham, cream of potato soup and cheddar cheese. YUM!
This casserole is different than other potato casseroles as it uses Cream of Potato soup rather than Cream of Chicken soup. This made the casserole creamy and delicious. It was delicious! I used fresh grated parmesan cheese. However, canned grated cheese is also good.
You can make this casserole ahead of time and freeze it for later. It is perfect for breakfast, lunch, and dinner. If you prefer to serve it as a side dish, you can leave out the ham. I prefer to divide the casserole into two foil-pans, one for baking and one for freezing later.

Ingredients:
1 (32-oz) package frozen hash brown potatoes
1 pound cooked diced ham
2Â (10.75-oz)Â cans condensed cream of potato soup
1Â (16-oz)Â container sour cream
2 cups shredded sharp Cheddar cheese
1½ cups grated Parmesan cheese
Instructions:
Preheat oven to 350oF. Lightly grease a 9×13-inch baking dish with cooking spray.
Mix together the hash browns and ham, cream of potato soup, cheddar cheese, and sour cream to a large bowl. Spread onto a baking sheet. Sprinkle with Parmesan cheese.
Bake covered for 1 hour or until lightly browned and bubbly.
