INGREDIENTS:

2 pounds boneless, skinless chicken thighs or breasts cut into 1-inch cubes
1/3 cup low-sodium soy sauce
1/3 cup brown sugar
1 tablespoon honey
1 tablespoon rice vinegar
1/2 tablespoon minced fresh ginger
2 cloves garlic, minced
2 tablespoons cornstarch
1 cup water
1/2 teaspoon sesame oil
8 skewers
Optional toppings: chopped green onion, sesame seeds

INSTRUCTIONS:

In a small bowl, whisk together the cornstarch and 1/4 cup of water until the cornstarch is fully dissolved.

In a medium saucepan, combine the soy sauce, brown sugar, honey, rice vinegar, ginger, garlic, 1 cup of water, and sesame oil. Heat the mixture over medium heat until it comes to a simmer, stirring occasionally.

Add the cornstarch mixture to the saucepan and stir well. Cook the sauce for about 2-3 minutes or until it thickens and becomes glossy. Remove the saucepan and let the teriyaki sauce cool to room temperature.

Place the chicken cubes in a large ziplock bag and pour half of the teriyaki sauce over the chicken. Close the bag and gently shake it to coat the chicken. Refrigerate the bag for at least 30 minutes to allow the chicken to marinate. Reserve the remaining teriyaki sauce for later use.

Preheat a grill or grill pan to medium-high heat. Thread the chicken onto skewers, dividing the pieces evenly among 8 skewers.

Grease the grill grates lightly and place the skewers on the grill. Cook the chicken for 20-25 minutes, turning every 3-4 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.

During the last few minutes of grilling, brush the remaining teriyaki sauce over the chicken skewers, and coat all sides.

Remove the skewers from the grill and rest for a few minutes. Serve the chicken skewers hot with chopped green onion and sesame seeds as optional toppings. Enjoy!
