Grilled Huli Huli Chicken is dangerously delicious! Marinated chicken thighs in brown sugar, soy sauce and sherry. Grill the chicken after letting it marinate for a day. This was a delicious dish that we ate twice in a week. It was absolutely delicious! You can use tenders or breasts of chicken instead of the thighs.
Last week, this Grilled Huli-Huli Chicken was our favorite meal. Chicken Legs love chicken thighs so I was thrilled to find this recipe in an old cookbook. We made it twice in one day!
Yield: 6 people
Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins
Ingredients:
½ cup packed brown sugar
6 Tbsp ketchup
6 Tbsp reduced-sodium soy sauce
2½ Tbsp sherry or chicken broth
½ tsp dried ginger
1½ tsp minced garlic
12 boneless skinless chicken thighs, about 2.5 pounds
Instructions:
Mix the first six ingredients in a small bowl. Reserve 1/2 cup for the basting. Cover and refrigerate.
Marinate chicken in marinade and place it in the refrigerator for at least 8 hours. I put the marinade and chicken in a gallon ziplock bags.
Grill the chicken until it is done for approximately 12 to 15 minutes. During the last five minutes of cooking, brush chicken with reserved marinade.
