Chicken Legs loved it so much, he asked me to make it twice in a row. It’s so delicious! It includes chicken, rice, cheese and green chiles. So comforting!

1 box Chicken Rice-a-Roni, plus water called for on package
½ cup sour cream
1 (10.75-oz) can Cream of Chicken Soup
1 (4.5-oz) can diced green chiles
1 tsp cumin
2 cups pepper jack cheese shredded
3 cups chopped cooked chicken
Preheat oven to 350oF Spray a 9×13-inch baking pan with cooking spray.
Follow the package instructions to prepare Chicken Rice-a Roni.
Combine sour cream and Cream of Chicken soup with green chiles, cumin and 1 cup of pepperjack cheese. Add cooked chicken to a large bowl. Add the prepared rice. Place in a baking dish.
Sprinkle the remaining 1 cup pepper Jack cheese over the casserole. Bake for 25-30 minutes or until cheese is melted.
