When you are in a rush and need a quick dinner, you might think of fried rice as your takeout staple. But it’s actually also very easy to make at home. You can do this in a wok or in a skillet. This Dump and Bake method makes cooking so much easier because everything comes together in the oven in one pan. That’s a one-pot wonder! There’s no pre-cooking, no prep, just one of those genius recipes where the oven does all of the work for you.

INGREDIENTS

1 1/2 cups long grain white rice, uncooked
2 cups chicken or vegetable stock
1 1/2 tablespoons soy sauce
1 tablespoon Chinese cooking wine or dry sherry
2 garlic cloves, minced
1 (16 oz) bag mixed frozen vegetables, such as carrots, peas, and corn
1/4 teaspoon black pepper
1 1/2 cups chopped bacon or ham
1 tablespoon sesame oil
3 green onions, thinly sliced

PREPARATION

Preheat oven to 400°F.

To a 9×13-inch baking dish, add the rice, chicken stock, soy sauce, cooking wine, garlic, mixed vegetables, and black pepper.

Stir and spread rice around so it’s fairly even. Sprinkle bacon or ham across the top.

Cover tightly with foil and bake 40 minutes.

Uncover, and bake 15 minutes more.

Remove from oven, cover loosely with foil once more and let sit 10 minutes.

Add sesame oil and green onion and fluff with a fork to distribute ingredients. Serve and enjoy!
