Ingredients

  1. 2 cups sliced asparagus
  2. 6 egg whites
  3. 2 whole eggs
  4. 1/3 cup diced onion
  5. 1/2 cup (low-fat) feta cheese, optional parmesan cheese
  6. 1/2 cup diced tomatoes
  7. 1/4 teaspoon black pepper
  8. Kosher or sea salt to taste

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all ingredients in a medium mixing bowl and pour into a quiche pan or 9-inch glass pie plate.
  3. Bake at 350° for approximately 45 minutes or until filling is set.
