Slow cooker, flavor-packed beef nacho soup This soup is a great comfort food, and it tastes just like nachos!

This soup is amazing. This soup is delicious! This soup exceeded my high expectations.

This soup is easy and delicious, with all the flavor of nachos! It’s just like eating nachos but in soup! It’s so delicious. It’s so good. I can’t stop looking at it, and neither can my children.

Cook Time: 4 hrs 30 mins
Total Time: 4 hrs 45 mins
Serving: 8

Ingredients

1 lb ground beef cooked and drained of fat
1 C  yellow onion chopped
1 C green bell pepper chopped
3 cloves garlic minced
1 jalapeño seeds removed and diced
15 oz corn drained
15 oz black beans drained and rinsed well
15 oz petite diced tomatotes drained
1 1/2 tsp chili powder
1 1/2 tsp salt
1 tsp ground black pepper
1/8 tsp red pepper flakes
3 1/2 C chicken or beef broth
8 oz cheddar cheese shredded
1 C heavy cream
3-4 Tb all purpose flour*
Green onions chopped for topping

Instructions

Add cooked beef, vegetables and beans to a slow cooker of 5-6 quarts. Season with seasonings, broth, and some water. Mix well.

Cover and cook on high for four hours or low for eight hours.

Stir in the shredded cheese after 4 hours. Mix flour and heavy cream until well combined. Combine in a slow cooker and stir. Continue cooking for 30 minutes more.

Serve warm with tortilla chips and chopped green onions.
