Ingredients
4 Thin cut boneless skinless chicken breast cutlets
4 Tbsp. Butter unsalted and divided
1 tsp. Paprika
Salt and pepper to taste
3 tsp. Minced garlic
½ C. White cooking wine
¼ C. Chicken broth
1 Tbsp. All purpose flour
1 C. Heavy whipping cream
Squeeze of fresh lemon
3 C. Spinach raw
Instructions
Melt 2 Tbsp of the butter in a skillet over medium high heat.
Season the chicken with salt and pepper and saute for 4 minutes per side. Remove and set aside.
Add the remaining butter to the skillet and saute the garlic in it for 30 seconds.
Pour in the cooking wine to deglaze the skillet. Saute until the liquid is reduced by half.
Whisk together the chicken broth and flour in a bowl.
Pour the flour mixture into the skillet and whisk to combine.
Mix in the heavy whipping cream, paprika and more salt and pepper to taste.
Stir in the spinach and a squeeze of fresh lemon.
Return the chicken to the skillet and coat in the sauce. Saute until the sauce has thickened and the chicken is cooked through.
