Who doesn’t love cobbler? It is always good when you come up with something new. My favorite thing to bake are gooey butter cakes. I make them often. So I added both a little play and with a little imagination, this recipe was created. Here is the result. This would go well with a peach cobbler, or any other fruit that is not too delicate.
Cook time: 45 Min
Prep time: 30 Min
Serves: 12-15
Ingredients
CRUST
1Â c bisquick baking mix
1/2Â c brown sugar, firmly packed
1/2Â c sugar
2/3Â c milk
1/2Â stick butter, unsalted
1 tsp pure vanilla extract
GOOEY LAYER
1Â pkg cream cheese 8 oz
2Â eggs
3 1/2Â c powdered sugar
1Â stick butter, unsalted melted
1 tsp pure vanilla extract
PEACHES LAYER
3Â c fresh or frozen peaches
1/2Â c sugar
3Â Tbsp flour
1 pinch salt
Directions
1. Preheat oven to 350 degrees. Place 1/2 stick of butter in a 9×13 pan and melt in the oven.
2. TO MAKE CRUST LAYER: mix all remaining crust ingredients (except butter) until smooth. Pour 1/2 of the mixture in bottom of pan with melted butter. DO NOT STIR.
3. TO MAKE PEACHES LAYER: Put peaches in a medium saucepan mix in flour, sugar and salt. Heat until mixture thickens slightly. Spoon peaches over crust mixture in pan.
4. TO MAKE GOOEY LAYER: Mix all ingredients until smooth and creamy. Pour over peaches. Make sure each layer is distributed evenly in pan as you pour it. DO NOT mix layers once in pan.
5. Drizzle remaining crust mix on top of cobbler (it will not completely cover the gooey layer). iBake for 45-50 min. Let cool at least 15 minutes before digging in. Excellent warm but good cold too.
