A dip that people love is black beans, corn, and Feta
When you look at all the vibrant colors the hearty ingredients in this dish produce, you might wonder why it is called “Ugly Dip”. We don’t mean to say that dip isn’t always the first thing people think of when they think of pretty food. Dip is an American classic dish that’s low-key and easy to make. It’s a shared meal that people love, and it’s addicting! We love the way dip brings people together, and makes for a great conversation starter. It’s magic when people come together. While the name of this dip might make some laughs, you will soon discover that it is seriously delicious after you have tried it.

INGREDIENTS
1 (15 oz.) can black beans, rinsed and drained
1 (15 oz.) can corn kernels (white or yellow), rinsed and drained
1 (4 oz.) package feta cheese, crumbled or chopped
1/2 cup extra-virgin olive oil
1/2 cup sugar
1/2 cup apple cider vinegar
1 bunch scallions, finely chopped
kosher salt and freshly ground pepper, to taste
tortilla chips, for serving
PREPARATION
In a small bowl, whisk together olive oil, apple cider vinegar and sugar, then season generously with salt and pepper.
In a large bowl, whisk together black beans, corn and feta until combined.
Pour dressing over bean mixture and stir together until everything is fully coated.
Refrigerate for at least 30 minutes before serving, so flavors have time to blend and build. Enjoy!
