You can stop what you’re doing and make this Beef Tamale Cassarole for dinner tonight! It is insanely delicious! We couldn’t stop eating this delicious Mexican casserole. Sweet cornbread is topped with seasoned meat, enchilada cheese and cheese. There’s nothing better than sweet cornbread! Add your favorite taco toppings to the casserole. We added some sourcream, lettuce, tomatoes and jalapenos to the casserole. This dish is making me hungry just typing about it!

Ingredients:
1 (8.5oz) pkg cornbread mix
1Â (14.75-oz)Â can creamed corn
2Â eggs
½ cup milk
2 cups shredded cheddar cheese, divided
1 lb ground beef
1Â (1-oz)Â package taco seasoning
⅔ cup salsa
1Â (10-oz)Â can enchilada sauce
Instructions:
Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add taco seasoning packet and salsa.
Cook for an additional 5 minutes.
Toss beef in enchilada sauce. Pour beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
Allow to cool for 5 minutes and cut into 6 or 8 squares. Top with favorite taco toppings, if desired.
