Ingredients
1Â lb lean ground beef, I used ground turkey breast and it was just as good
1Â onion, diced
1Â lb light Velveeta cheese, cubed
4Â oz reduced-fat cream cheese, softened and cubed
1Â can diced tomatoes with chiles, drained (If too thick, add in a little more milk (10 oz)
1Â lb bacon, cooked and crumbled, I used center cut bacon
1/2Â c milk, you may need more
1Â c shredded Mexican-style cheese
Directions
1. Cook and drain bacon; set aside.
2. In a large skillet over med-high heat, brown beef or ground turkey; drain the beef.
3. Then, saute diced onion in a large skillet until translucent.
4. In a large saucepan, melt Velveeta cheese, cream cheese, and 1/2 cup milk.
5. Stir over medium heat until melted. Add shredded Mexican cheese, beef (or turkey), tomatoes, and bacon. Mix until combined.
6. If too thick, add in a little more milk.
